I absolutely love Mediterranean food. It is so fresh and flavorful. This sauce is so easy to make and is perfect on almost anything–pita, vegetables (it’s really good with french fries), chicken, beef, seafood… the list goes on and on.
Tzatziki Sauce is basically just yogurt, cucumber, garlic, dill, salt, and olive oil. The beauty of it is if you like more garlic-add more garlic, if you like more dill-add more dill. You can make it any way you want. You really can’t mess it up. The only crucial thing is to make sure to drain your yogurt and your cucumber. Simple, right.
3 cups plain yogurt
1 long, thin cucumber, peeled and grated
6 cloves garlic, finely minced
½ teaspoon salt
4 tablespoons olive oil
3 tablespoons finely chopped fresh dill
Use a strainer lined with cheesecloth or double thickness paper towel and drain the yogurt. Let sit for at least 4-6 hours. Peel and grate the cucumber, and strain using a cheesecloth or double thickness paper towel also. Once both are drained, add to a large bowl and add the garlic, salt, olive oil, and dill. Stir to combine.
Store covered in the refrigerator for up to 1 week.
