I hope everyone is having a great holiday.
I’m stuck at work, but I hope that you can enjoy this cocktail on our wonderful national holiday.
It’s not red-white-and blue but it sure is good.
Two of my super sweet friends, that know I love peaches,
brought me back some super delicious Ruston peaches from the festival a week ago.
When I tasted the first one, super juicy and delicious,
I knew that it would make the perfect frozen cocktail.
Peach Daquiris
1 1/2 cups peach puree
1 cup spiced rum (I used Kraken)
1/4 cup freshly squeezed lime juice
1/4 cup mint simple syrup**
2 cups ice
mint leaves for garnish
In a blender, add the peach puree, spiced rum, lime juice, and mint simple syrup. Blend well. Add the ice and blend well.
Pour into chilled glasses and garnish with the mint leaves.
**Mint Simple Syrup
2 cups water
2 cups sugar
10 mint leaves
In a small saucepan, combine the water, sugar, and mint leaves. Bring to a boil and cook for 5 minutes. Allow the syrup to cool completely. Strain over a fine sieve to remove the mint leaves. Cover and refrigerate for up to 2 weeks.
