
I think lately we’ve all been dreaming of That One Warm Day, when we can return to the beach or even just put on a pretty sundress and enjoy the weather. With the Snowpocolypse of 2021, I knew that I had to share a tropical inspired cocktail made with snow. Of course, this cocktail can definitely be made with ice, but we’ve really got more snow that we can handle, literally, that it was the preferred chilling agent of the day.
This cocktail is so beautiful and definitely makes a statement. The hibiscus simple syrup is the most striking color. I prefer to serve it poured on top to slowly seep into the cocktail, but you could definitely shake it with the other ingredients to achieve a definite red cocktail. For this cocktail, I made the hibiscus simple syrup with half the sugar due to also using the toasted coconut simple syrup. This is a relatively tart cocktail, so definitely up the sugar content if you like your cocktail a little sweeter.

That One Warm Day
Using a shaker filled with ice, combine the tequila, lime juice, and toasted coconut simple syrup. Shake vigorously for 10 seconds until well combined. Strain into a tall glass filled with ice. Top with the hibiscus tea. Garnish with lime wheels.
