Spicy Pulled Pork Sandwiches with Cole Slaw
(slightly adapted from Pioneer Woman)
2-3 pound pork loin roast
1 onion, cut into quarters
1 can chipotle peppers in adobo (7-ounce can)
2 cans Dr. Pepper
4 tablespoons brown sugar
salt and pepper
Place the cut onion into the bottom of crock pot. Salt and pepper the pork loin and place in the crockpot on the onions. Add the chipotle peppers and brown sugar. Pour Dr. Pepper over all and stir to combine.
Cook on high for 6-7 hours.
Remove roast from crock pot and shred with forks.
Place roast back into crockpot and cook for another hour.
1 package shredded cabbage
3 green onions, chopped
3/4 cup mayonnaise
2 tablespoons Creole mustard
2 tablespoon chopped sweet jalapenos
1 tablespoon juice from jalapenos
Combine all ingredients in a bowl and mix well. Place in refrigerator and allow to chill for at least 30 minutes prior to serving.
