Every once in a while you make a meal that you just really, really love. Well, this is one of those meals. Decadent lobster, earthy mushrooms, tender sautéed vegetables, and silky unsweetened coconut milk all together make for one delicious meal. Add these fantastic gluten-free Red Rice Ramen Noodles and you get an easy to make delicious meal.

Fortune Gluten-Free Noodles

Fortune Noodles is hosting a blogger challenge with their new gluten-free noodles and I was selected as one of the participants. These Fortune gluten- free noodles are NEW to the market, shelf stable and can be found in the Asian dry grocery section in selected grocery stores including Albertsons, Von’s, Lucky’s, Safeway, Carr’s, Dierbergs Markets, and Cub Foods. They come in four different flavors including Red Rice Ramen Shoyu, Ramen Miso Pork, Soba Buckwheat Shoyu, and Udon Garlic Chicken.

How to make Fortune Noodles…
Making this delicious meal was so easy. These noodles are easily prepared in 3-4 minutes in boiling water or in the microwave. I mean, how easy is that?
I started this recipe by sautéing loads of delicious vegetables–onions, garlic, jalapeño peppers, red bell peppers, bok choy, mushrooms, and a little bit of garlic. Next, I added decadent lobster and seared it to perfection. I added some chicken stock, unsweetened coconut milk, fish sauce, the cooked noodles and voila the meal is done.

Heat the olive oil in a small pot and add the onions, bell peppers, jalapeño peppers, and bok choy, and mushrooms and sauté over medium heat until vegetables start to soften, about 8-10 minutes.
Add the garlic and cook for another 2-3 minutes, being careful not to burn the garlic.
Add the ginger and lobster and cook for an additional 2-3 minutes until the lobster is almost done.
Add the shoyu seasoning, fish sauce, vegetable or seafood stock, and coconut milk. Allow the mixture to begin to simmer and cook for another 10 minutes.
Cook the noodles in boiling water for 3 minutes or until done. Drain and rinse. Add to the vegetable soup mixture and stir to combine.
Garnish with a few jalapeño slices and a few Thai Basil leaves.
