Roasted Pesto Zucchini

 4 large zucchini, cut into quarters lengthwise
 1 tbsp olive oil
 salt and pepper
 ½ cup basil pesto
 ¼ cup parmesan cheese, finely shredded

Preheat oven to 400℉. Place zucchini on a baking sheet and drizzle olive oil making sure to cover zucchini pieces thoroughly. Season lightly with salt and pepper.

Spread pesto over zucchini and roast for 20 minutes or until lightly browned. Remove from oven and sprinkle with shredded cheese.
