In a cocktail shaker filled with ice combine the spicy rum, white rum, strawberry simple syrup, and lemon juice. Shake vigorously and strain into a chilled martini glass. Top with strawberry foam.
Combine the sugar and water in a saucepan. Bring to a boil and allow the mixture to boil for 2 minutes. Turn off the heat and add the strawberries. Allow the mixture to cool and sit for up to 24 hours. Strain into a covered jar for up to 2 weeks in the refrigerator.
Add the egg whites and strawberry simple syrup to a chilled whipped cream dispenser. Shake 5-6 times and then add the whipped cream charger. Shake another 2-3 times.
