Preheat oven to 500℉. Place a baking sheet in the oven to preheat.
Spread flatbread to 1/2" thick (instead of 1/4" thick as per the recipe). Top with honey and spread evenly.
In a small bowl, add the cheese and herbs. Toss to coat evenly. Spread onto the pizza dough.
Transfer to the hot baking sheet and cook for 10-12 minutes until the dough is crispy and the cheese is melted.
Drizzle with truffled honey and top with freshly ground pepper. Slice and serve while warm.
