I don’t know if there is any flavor combination that I enjoy more than basil, tomato, and balsamic vinegar. Add some mozzarella cheese and you’ve got a winner. I love to make this appetizer when my tomatoes and basil are ready for harvest every year.
Mini Caprese Salad
16 cherry tomatoes
16 mozzarella balls, about 1 inch in diameter each
4 basil leaves
Wash and core each cherry tomato. Stuff each one with a mozzarella ball. Julienne the basil leaves and place a few over each tomato. Drizzle each with a few drops of balsamic vinegar.
