Sometimes I do our grocery shopping, but usually, it falls to my husband. My sweet mother-in-law lives in an independent living apartment and my husband is her go-to for grocery shopping. So why not have him pick up the things on my list as well. I feel super lucky that he happily does the shopping (he also does the laundry and vacuums). But every once in a while, I find myself wandering through the grocery store, picking up all kinds of things that we probably really don’t need. That’s how this cocktail started off.
Truthfully, I had only had Dragon Fruit twice before I made this mojito and I really didn’t remember what it exactly tasted like. I had it in a martini and a margarita (of course it was cocktails, I tend to seek out exotic ingredient cocktails) and I remember liking them a lot. So when I stumbled upon some in one of our local grocery stores, I thought maybe a mojito??
And as a matter of fact, they actually do make a delicious mojito. The flavor is not too sweet, and just a little tart. It is light, complimenting the lime and mint perfectly. Overall, a very refreshing cocktail. Perfect for sipping on a sweltering, hot summer day–which is what all of the days have turned into lately (please hurry up and get here Fall!!!).

Dragon Fruit Mojitos
A delicious, refreshing exotic cocktail.

ingredients
Dragon Fruit Mojitos
- 1/2 of a Dragon Fruit, diced
- 1/2 of a lime, cut into quarters
- 1 teaspoon sugar
- 7-8 mint leaves
- 2 ounces silver rum
- club soda
- mint leaves and lime wedge, for garnish
instructions
To make the mojito:
- In a shaker, add the lime and sugar. Muddle until the sugar is dissolved.
- Add the mint leaves and Dragon Fruit and muddle until all is macerated.
- Add the rum and fill with ice.
- Shake vigorously until thoroughly mixed.
- Pour into a tall glass. Top with club soda.
- Garnish with a lime wedge and mint leaves.
