Why and How To Grill A Pineapple…
I just love the flavor of grilled pineapple. Grilling it makes it so sweet, especially when the pineapple is basted with brown sugar and dark rum. This is a must. Talk about amazing. Grilling pineapple is so, so easy and definitely worth it for the added complexity versus a regular mojito.
To grill a pineapple, cut it into slices about ¾ to 1″ thickness. Heat the grill to 375℉. Make sure to coat the grill with non-stick cooking spray, because the pineapple will definitely stick. Make sure to baste the pineapple generously with the brown sugar and rum mixture each time you flip them. This will make your pineapples irresistible.
How To Make A Mojito…
A mojito is probably one of my favorite rum cocktails. It is also so easy to make and definitely worth a few extra steps to achieve an amazing balanced cocktail. One of my friends, who is so, so funny, thinks that muddling is the ultimate in cocktail making. Whenever she comes over and has a drink she always asks me if I muddled it. I usually try to make one that is muddled just for her. (This is my all-time favorite muddler.)
So while I’m talking about a muddler, that’s the first step. Muddle the mint in the bottom of the cocktail shaker with sugar and lime. This will release all of the oils from the mint for a super fragrant cocktail. Next, add the fruit and rum. Shake, shake, shake, and pour all of it into a tall glass. You’ll want to see the mint and fruit. Lastly, top with club soda. One of the things that makes this mojito over the top is the dark rum floater on top. Don’t skip it, you’ll regret it.

Grilled Pineapple Mojitos
Place the mint leaves and sugar in an empty shaker and muddle gently until the mint releases the oils. Add the lime and continue to muddle until the lime is macerated. Add the chopped pineapple and muddle until broken into small pieces.
Add the white rum and fill the shake with ice. Shake vigorously until the drink is well mixed. Pour into a tall glass and top with club soda and a shot of dark rum. Garnish with mint leaves and a wedge of grilled pineapple.
In a small bowl, combine the brown sugar and rum. Stir to combine. Preheat the grill to 375℉. Spray the grill with non-stick cooking spray. Place the pineapple slices on the grill and baste with the brown sugar-rum mixture. Flip the pineapple every 2 minutes until the pineapples become soft and caramelized.
