
It’s no secret that I’m a huge fan of margaritas and I absolutely am crazy about these Grilled Pineapple Chipotle Beeraritas. This Beerarita is a spicy, sweet margarita topped with a delicious Mexican beer that is perfect on a hot spring or summer day.
Grilling the pineapple makes it super sweet. Sweet enough that this margarita is perfectly sweet without any added sugar. I also used some delicious Ancho Reyes Chile Liqueur, a crisp and refreshing Mexican beer, and rimmed the cocktail with a delicious chile-lime infused salt to bring out all the flavors. Grilled Pineapple Chipolte Beeraritas
Place the grilled pineapple in a cocktail shaker. Muddle the pineapple until completely macerated.
Add the tequila, freshly squeezed lime juice, Cointreau, and Ancho Reyes Chile Liqueur. Add ice and shake vigorously to combine. Pour into a glass filled with ice and rimmed with lime and coarse chile-lime salt.
Top the margarita with Mexican beer and garnish with a dehydrated pineapple and lime wheel.
