Our oldest daughter arrived home this past weekend from New Orleans with an ice chest containing several dozen oysters. I was so excited!! Oysters are a real favorite of mine. I completely love the chargrilled oysters from places like Drago’s, Acme Oyster House, and Royal Street Oyster Bar. I thought that it would be a fabulous treat. Now, I can’t say that my husband was all that excited. He was the one that I volunteered to shuck the oysters. So we got out our no-cut glove (because the shells will cut your hands) and our handy oyster knife and (he) went to work.
Grilled Oysters LouLou
2 dozen oysters on the half shell
2 sticks butter
1 bunch green onions, finely chopped
10 cloves garlic, pureed
2 tablespoons oregano, finely chopped
2 tablespoons thyme, finely chopped
1 teaspoon crushed red pepper
2 tablespoons creole seasoning (I used Tony’s)
2 tablespoons fresh lemon juice
1 tablespoon Worcestershire sauce
1 teaspoon hot sauce
1/3 cup white wine
1 1/2 cups pecorino-romano cheese
In a heavy saucepan melt butter and add green onion and garlic. Remove from heat and let stand 5-10 minutes to harden. Add seasonings, lemon juice, Worcestershire sauce, and wine. Stir until combined.
Heat grill to 300 degrees. Place all oysters on grill and spoon butter mixture onto oysters. Let cook for 5 minutes, until starting to brown.
Add 1/2 tablespoon cheese to each.
Allow cheese to melt and add 1 teaspoon butter mixture again.
Remove and place on a heat-resistant platter. Serve with french bread.
