This has to be one of my favorite meals. Not only because it takes about 30-45 minutes to prepare and cook from start to finish, but because of the wonderful flavors. I personally think that almost everything is better wrapped in bacon (food, anyway).
Bacon Wrapped Shrimp
2 pounds large shrimp
1/4 cup stone ground mustard
4 cloves garlic, minced
3 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
1 package center-cut bacon
Peel and devein the shrimp. Cut the bacon in half. Wrap each shrimp with a piece of bacon. Place on a skewer. In a small bowl, mix the mustard, garlic, olive oil, salt, and pepper. Heavily brush the mixture onto the shrimp. Preheat the grill to 350 degrees.
Place the shrimp on the grill and cook until the bacon is done, turning every 4 minutes. It will be crispy. This will take approximately 12-15 minutes.
I also grilled some corn on the cob, which is a great side for this dish. Just clean your corn and rub with a small amount of butter. Sprinkle with salt and pepper. Wrap in nonstick foil and cook for approximately 30 minutes, turning every 5-7 minutes. You want the corn to brown, but not burn.
