I think that one of the best little treats, that really makes me think of spring, has to be lemon bars.
There is something really special about a dessert that is sweet and sour at the same time.
I especially love them made with a graham cracker crust.
(I love almost everything made with a graham cracker crust, though.)
I found this recipe on That Skinny Chick Can Bake
and it is very easy and oh, so good.
Graham Cracker Lemon Bars
1 cup graham cracker crumbs
4 tablespoons butter, softened
1 tablespoon sugar
1 cup sugar
1/4 cup freshly squeezed lemon juice
1/2 teaspoon baking powder
Preheat the oven to 350 degrees. Line an 8×8 inch pan with non-stick aluminum foil. Set aside.
Combine the graham cracker crumbs, butter, and sugar in a medium bowl and mix well. Pat into the bottom of the prepared pan. Bake for 15 minutes.
While the crust is baking, make the lemon filling. Mix together the eggs, sugar, lemon juice, and baking powder until well combined. Carefully pour over the hot crust and return to the oven. Bake for 25 minutes more. Cool before cutting.
