
One of the best things about being empty-nesters is that I don’t have to come home from work and cook dinner every night. I basically cook what I want when I want it. So when I get a pizza or flatbread craving I usually make it. (Not that my kids would have been upset about having flatbread some nights, but it’s much easier with just my husband and me.) When it’s just the two of us there is no debate on toppings–he’s as easy to please as can be. This Flatbread with Bacon, Tomato, & Avocado is one of our favorites and is perfect for an appetizer or a dinner for two.
Summer is the perfect time to enjoy this flatbread because it is definitely best with delicious fresh tomatoes. I’m a huge fan of bacon and tomato sandwich fan and love the salty and somewhat sweet combination. To me, it was a no-brainer to use fresh heirloom tomatoes, crispy bacon, and perfectly ripe and creamy avocado to create this iconic pairing on a delicious flatbread.
Flatbread vs. Pizza
A flatbread is basically a pizza. However, making pizza is usually a bit more time consuming and uses leavened dough. Both are easy to make, but the pizza dough requires a little more patience, especially if you like to make your own dough (as I do). This flatbread dough is so easy and comes together very fast, only 45 minutes for the dough to rise. Flatbread dough is thin and crispy, almost like a really thin crust pizza. Flatbreads also tend to not have as much pizza sauce on them. I’m a fan of both but tend to make flatbreads more often just because of the easiness of preparing the dough. Making this Flatbread with Bacon, Tomato, & Avocado is quick and easy.

Flatbread with Bacon, Tomato, & Avocado
The flatbread dough makes two flatbreads. I only used one for this recipe.
Make the flatbread according to the recipe directions. (The recipe will make 2 flatbreads, I only used one for this recipe.)
Preheat the grill to 500℉.
In a small bowl, combine the basil, garlic powder, parsley, and thyme. Brush the flatbread dough with olive oil and sprinkle the herbs evenly on the flatbread.
Add the mozzarella cheese, bacon, and tomatoes to the flatbread.
Grill for 8-10 minutes until the crust is crispy and the cheese is melted. Add the sliced avocado and sprinkle with crushed red pepper flakes. Slice and serve hot.
