
Are you a burger fan? I definitely am. I’m not a huge steak eater, but I love a good burger. Usually, I choose a turkey burger (because I’m always trying to watch my calories), but sometimes you just need a good ole beef burger. These Fajita Burgers with Chipotle Aioli really kick it up a notch. Using my fajita seasoning (which is amazing), guacamole, chipotle aioli, and sautéed peppers and onions, this burger is hugely flavorful and delicious.

The Best Fajita Seasoning
I’m a huge fan of making my own seasoning blends (you can find my taco seasoning blend here). First of all, it’s so easy and fresh. Secondly, I also love that I know exactly what it is the seasoning blend. (I hate to buy a pre-packaged mix that’s full of cornstarch and salt). This seasoning blend is so easy to prepare and can be stored in a sealed jar for up to 6 months. To make this fajita seasoning you need:
- cumin
- chipotle chili powder
- paprika
- garlic powder
- onion powder
- oregano
- salt
- cayenne pepper
How To Make Chipotle Aioli
Chipotle Aioli is so amazing on these fajita burgers and as a dipping sauce for the roasted sweet potato fries. It’s simple to make full of flavor. You can either whip the aioli by hand or use a blender to blend it smoothly (this is my preference). This aioli is made with just a few ingredients–mayonnaise, chipotle peppers in aioli, lemon juice, pressed garlic, and salt and pepper. It’s amazing how just a few ingredients come together for an amazing sauce.

This sauce is so amazing with my Roasted Sweet Potato Fries. This recipe is an oldie but goodie. You can even sprinkle a small amount of the fajita seasoning on them (in place of the cajun seasoning) before cooking for some added spice.
Cooking hint…
To get oven baked fries as crispy as possible, make sure the potatoes are completely dry before seasoning and also spread them evenly without touching to allow air to circulate around each potato slice.

Fajita Burgers with Chipotle Aioli & Roasted Sweet Potato Fries
Preheat the grill to 400℉.
Separate the hamburger meat and press into 8 patties and season with the fajita seasoning. Grill the burgers, flipping every 5 minutes until the internal temperature reaches 155℉, about 14 minutes.
In the last few minutes of cooking, add the cheese to melt and toast the hamburger buns.
To serve the cheeseburgers, coat each bun with the chipotle aioli, sautéd peppers & onions, and guacamole.
Combine all the ingredients together and store in a sealed container for up to 6 months.
Combine the mayonnaise, chipotle pepper, sauce from chipotle peppers in adobo, garlic, and lemon juice in a blender. Blend until smooth. Season with salt and pepper to taste.
Using a large skillet, heat the olive oil over medium heat. Add the onions and peppers. Once the vegetables start to soften, reduce the heat to low, and cook for 3-4 more minutes until done.
