Guacamole is definitely one of my favorite go-to appetizers. It’s really easy to make and almost everyone is a fan. This time of year I’m always entertaining and I can run into the kitchen and whip up a bowl of guacamole in no time flat whenever someone stops by.
Usually I stick to the original version–it never fails, but this time I decided to fancy it up a bit and added some lump crab meat to the mix–WOWZA!! It is fantastic. Crab and avocado are definitely the best of friends.
Crab Guacamole
4 large avocados
1 small purple onion, diced
3 cloves garlic, minced
1 jalapeño pepper, seeded and minced
1 poblano pepper, seeded and diced
1/2 teaspoon cumin
1/2 -1 teaspoon salt
Juice of a lime
8 ounces lump crab meat
cilantro (optional)
To prepare the avocados–remove the pits and dice in the skin. Use a spoon to scoop the avocado from the skin. Place in a large bowl. Add the onion, garlic, jalapeño, and poblano. Stir to combine. Add the cumin, 1/2 teaspoon salt, (and the cilantro-if using–the husband does not like at all so I usually leave it out) and lime juice. Stir to combine. Add the lump crab meat and gently stir to combine. Taste and add remaining salt if needed.
This looks yummy but I have a question: is the "dumb crabmeat" more or less expensive than the regular kind? Asking for a friend. ….
