This past weekend I taught two different cocktail classes (here are a few others that I’ve taught–they are so much fun– here, here, and here.) Both classes centered around cocktails that would be perfect for the holidays. The first cocktail on the list that we made is a cocktail that is absolutely perfect for a delicious holiday brunch. Clementine Rosemary French 75s are a delicious blend of freshly squeezed clementine juice, gin, rosemary simple syrup, and topped with sparkling wine. It is simple to make and so, so delicious.
Clementine Rosemary French 75s
Using a shaker filled with ice, add the clementine juice, gin, and rosemary simple syrup. Shake vigorously and strain into a champagne flute. Top with champagne or sparkling wine. Garnish with a fresh sprig of rosemary.
Add the clementine juice (double strain), gin, and rosemary simple syrup to a pitcher. Stir to combine and refrigerate until ready to serve. Stir before serving and pour into individual champagne flutes. Top with champagne or sparkling wine right before serving. Garnish with a rosemary sprig.

This cocktail is also perfect for a single serving or to serve a group (socially distanced, of course). With just a few ingredients, you can prepare the cocktails before serving and just add the sparkling wine right before for an easy presentation.

A few of the other cocktails we enjoyed during the cocktail classes were St. Nick’s Nightcap and the Cherry Bourbon Manhattan. Both are perfect for the holidays.
