When I was looking for a new salad recipe this holiday season I turned to Pinterest (where else).
I came across this recipe from a website named Espresso and Creamand the title and picture had me hooked. It looked and sounded so good.
I love the mixture of fruit, nuts, and cheese. Such a delicious combination. I also think that this salad would be delicious with grilled chicken.
Chopped Salad with Pears and Cranberries
(slightly adapted from Espresso and Cream)
6 to 8 cups chopped romaine lettuce
2 medium pears, peeled and chopped (I used Bartlett)
1 cup dried cranberries
1 cup chopped walnuts, toasted
8 slices bacon, crisp-cooked and crumbled
4 to 6 ounces feta cheese, crumbled
Poppy Seed dressing
In a large bowl, combine the lettuce, pears, cranberries, walnuts, bacon, and feta cheese. Drizzle generously with poppy seed dressing and balsamic vinaigrette.
