
I have been on a hiatus of sorts lately, but I had to take a break from my break to share these Blackberry Watermelon Mojito Popsicles. One of the reasons for my much-needed break was that we just returned from a fabulous, relaxing vacation to Florida’s 30A, specifically Seacrest Beach. It is definitely one of our favorite places and the down-time was definitely needed.
(We were supposed to be in the South of France and Portugal this year, thanks so much COVID.) It was such a different vacation from what we have done in the last ten years or so. I told my husband that it felt like the vacations we took every year when the kids were young. (We went to Destin, FL every single year-their choice, because they got to bring friends.) This year, we really enjoyed the down-time and went deep-sea fishing- definitely, a new experience for me, spent many hours on the beach, and just hung out. RELAXATION was the keyword on this trip.

My sister, brother-in-law, and their youngest son joined us and we had the best time. I’ve made some big changes lately and just felt that I needed a little refresh in order to regroup, reorganize, and recharge. It has felt so good.
Ok, so back to the main point of this post–Blackberry Watermelon Mojito Popsicles. They are the absolute perfect summer treat. Just four simple ingredients–blackberries, watermelon, mint simple syrup, and rum. That’s it. They are so, so easy and definitely a crowd-pleaser.
I love to serve cocktails in popsicle form, especially on days by the pool. I also really love them in a glass with a little champagne or wine poured over the top. So delicious and who doesn’t love a super cute presentation.
(This is my favorite popsicle mold. It’s so easy to use and very affordable. )

Blackberry Watermelon Mojito Popsicles
Combine all ingredients and pour into popsicle molds. Freeze for at least 6 hours or overnight.
