
Ok, now Christmas is over, so I’m ready for summer. Just kidding, kind of. I do usually love Mardi Gras, but since it’s cancelled this year, can we just skip ahead and go straight to a warm and sunny beach? I guess when I was making this cocktail, All Day I Dream of Pineapple, I was unconsciously thinking all of these thoughts.
Every time I make a pineapple drink, I always think fondly of the vacation that we took with my sister and brother-in-law in Hawaii. The pineapples were absolutely amazing. As sweet as any piece of candy. Lately, every pineapple that I’ve bought at our local supermarket has been crazy sweet. When I tasted this last one, I immediately thought of the fabulous pineapple cocktails that we enjoyed on The Big Island.

Ingredients Needed…
- Bourbon, I used Four Roses (This Bourbon has flavors of ripe plum and cherries.) It’s perfect with the sweetness of the pineapple.
- freshly pressed pineapple juice
- pineapple syrup
- freshly squeezed lemon juice
- Angostura bitters

This delectable cocktail has the perfect amount of sweetness. The bourbon and pineapple pair perfectly creating a delicious and refreshing cocktail perfect for when you are dreaming of the beach.
All Day I Dream of Pineapple
Using a shaker filled with ice, combine the bourbon, pineapple syrup, pineapple juice, and lemon juice. Shake vigorously to combine for 10 seconds. Pour into a chilled martini glass and add the dashes of bitters. Garnish with a dehydrated pineapple ring and a pineapple crown.
Combine the pineapple juice and sugar in a pan over medium heat. Bring the mixture to a boil and cook for 3-4 minutes until the syrup begins to thicken. Remove from heat and allow to completely cool before using.
